Happy Bread

The wheat we eat today is not the same as 50 years ago.  Even if we buy organic, non-GMO bread and other wheat products, we are not exempt because even organic wheat undergoes a hybridization process.  This means that the wheat plant is cross-pollinated with other grains to increase yield.  According to naturopaths Josh Axe and Barbara O’Neil, the hybridization process causes a number of problems.  The amount of amylopectin A (also known as the super carbohydrate) is greatly increased.  Due to its molecular structure, this carbohydrate is more easily digested and can raise blood sugar faster than a candy bar.  This causes blood sugar and insulin spikes after a meal, leading to excess weight and many other health problems.  The amount of gluten in hybridized wheat has also doubled, leading to inflammation of the gut lining, leaky gut syndrome, weight gain, diabetes, autoimmune disease,  pyrrole disorder, and depression.

We live in a world where there are so many disease causing substances that we often feel overwhelmed and paralyzed by all the information provided by the latest research.  Perhaps we can focus our attention and energy on eradicating depression first and foremost since Ellen White wrote that “nothing is so fruitful a cause of disease as depression …” (1T 702 (1868)).  Decreasing our wheat consumption would then be a good idea in the light of the information provided above.  We also want to add omega-3 fatty acids to our diet since they reduce the symptoms of depression and anxiety as well as providing a number of other health benefits including lowering cholesterol, improving IBS, and reducing the risk of cancer, diabetes and heart disease.

It is difficult to cut down on wheat - especially bread.  So we have developed a recipe that kills two depression birds with one stone… a waffle that serves as a bread substitute that contains no wheat, but consists of all the best sources of vegan omega-3s.  It is very easy to make and the batter can be kept in the fridge for up to a week.  They’re best freshly prepared just before serving and it is quick to make a single portion when needed.  Just remember that it is not a waffle.  We tend to expect anything in that shape to be sweet and light.  This is closer to a slice of brown bread, and we use a waffle iron only because it provides a quick and easy way to cook a ‘slice’ at a time. Omega 3 Waffle (Bread Substitute)

Blend together:

  • 1  cup ground golden flax seed
  • ½ cup ground chia seeds
  • 1 cup walnut meal
  • 1 teaspoon Himalayan salt
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon onion powder (optional)
  • 1+3/4 cup water (bit more if consistency is too tight)

 

Let the mixture stand for 5 minutes until it becomes firm - like the consistency of soft play doh. Spoon onto a waffle iron and cook until set.

Serve with avocado, tomato, hummus  or any spread of your choice.
